Ayllu’s Guacamole Recipe

Ayllu’s signature Guacamole brings together the creamy richness of ripe avocado with the citrus heat of aji amarillo, balanced with crisp tortillas and prawn crackers.

Ingredients:

For the guacamole

  • 1 ripe avocado

  • ½ tsp chopped red onion

  • ½ tsp chopped red chilli

  • 1 tbsp aji amarillo (see recipe below)

  • ¼ tsp Maldon sea salt

  • Pinch of coriander cress

  • 3 aji amarillo tortillas

  • 3 prawn tortillas

For the aji amarillo

  • 30 g rice wine vinegar

  • 225 g lemon juice

  • 120 g aji amarillo purée

Method:

Make the aji amarillo:

  • Mix the rice wine vinegar, lemon juice, and aji amarillo purée until smooth. Set aside.

  1. Prepare the guacamole base:

    • Cut the avocado in half, remove the skin, and place in a bowl.

    • On one side of the avocado, add the chopped red chilli; on the other side, add the chopped red onion.

    • Spoon in 1 tbsp of the prepared aji amarillo and sprinkle with Maldon sea salt.

    • Garnish with coriander cress.

  2. Final touch (tableside service):

    • The avocado is smashed fresh in front of the customer for maximum flavor and experience.

  3. Serve:

    • Present the guacamole with a side bowl containing 3 corn tortillas and 3 prawn crackers.
